Duties & Responsibilities:
- Overall responsibility for kitchen operations, including food preparation, cleanliness, and equipment upkeep.
- Design, cost, and regularly update menus in line with seasonal availability and company standards.
- Ensure food quality, portion control, presentation, and compliance with 5-star service standards.
- Enforce statutory hygiene, SHEQ, HACCP, and food safety requirements at all times.
- Manage purchasing, ordering, stock control, stock rotation, and regular stocktakes.
- Lead, train, and develop kitchen staff to improve productivity, skills, and performance.
- Plan staffing levels in line with business demand and service level agreements, including time and attendance monitoring.
- Maintain strong financial controls, including food costing, GP monitoring, and profitability improvement initiatives.
- Liaise with management on daily operations, special functions, reporting, and administrative requirements.
- Manage client and guest relations, feedback resolution, departmental meetings, and staff performance reviews.

- Ability to demonstrate leadership, innovation, and commitment to their job function.
- Strong financial/business acumen & a clear understanding of food cost and labour efficiencies.
- Proficiency with cooking range, ovens, and other modern kitchen equipment.
- Good team player with excellent communication skills and strong client/customer service orientation.
- Computer literate; strong organizing and planning skills.
- Risk management skills.
- Excellent culinary skills and food preparation techniques.
Qualifications:
- Degree in Food Production or equivalent combination of education and experience sufficient to perform job duties.
- Post-qualification such as Associate Culinary Diploma or Degree; Professional Cookery or trade-tested certification is an added advantage.
- At least 5 years working experience in varied kitchen positions within a similar environment.
- Strong competency in kitchen functions and administration; able to work all shifts when required.
