Job Summary
The Food and Beverage Controller is responsible for monitoring, controlling, and reporting all food and beverage costs to maximize profitability while maintaining operational efficiency. The role oversees inventory management, cost analysis, stock control, purchasing verification, and compliance with company policies to ensure accurate financial reporting and effective cost management within the hotel.
Key Responsibilities
- Monitor and control food and beverage costs to ensure they remain within approved budgets.
- Conduct daily, weekly, and monthly inventory counts of food, beverages, and operating supplies.
- Verify stock receipts, transfers, issues, and returns for accuracy and completeness.
- Prepare food and beverage cost reports and analyze variances.
- Monitor inventory levels and recommend reorder quantities to prevent stock shortages or overstocking.
- Review purchase orders, supplier invoices, and goods received notes for accuracy.
- Ensure all purchases comply with company procurement policies and approved pricing.
- Monitor recipe costing, menu pricing, and portion control to maintain profitability.
- Identify wastage, spoilage, theft, and other inventory discrepancies, and recommend corrective actions.
- Perform regular spot checks and stock audits of stores, kitchens, bars, and other food and beverage outlets.
- Reconcile inventory records with accounting and point-of-sale (POS) systems.
- Prepare monthly inventory valuation and cost reports for management.
- Support internal and external audits by providing accurate inventory and financial documentation.
- Work closely with the Purchasing, Kitchen, Restaurant, Bar, and Finance teams to improve inventory control and operational efficiency.
- Ensure compliance with company policies, food safety standards, and internal control procedures.
Qualifications
- Must be willing to relocate to Butajira
- Bachelor’s Degree or Diploma in Food Engineering, Industrial Engineering, or related field.
- Minimum of two (2) years of experience as a Food and Beverage Controller, Cost Controller, or Inventory Controller in a three-star (3★) hotel or higher.
- Experience working with hotel inventory management systems and Point of Sale (POS) systems is required.
Required Skills and Competencies
- Strong knowledge of food and beverage cost control principles.
- Good understanding of hotel inventory management and stock control procedures.
- Knowledge of purchasing, receiving, and store management processes.
- Proficiency in Microsoft Excel and hotel accounting or inventory management software.
- Experience using hotel POS systems.
- Strong analytical and numerical skills.
- Excellent attention to detail and accuracy.
- Strong organizational and reporting skills.
- Ability to identify cost-saving opportunities and reduce inventory losses.
- Good communication and teamwork skills.
- Ability to work under pressure and meet reporting deadlines.
- High level of integrity, accountability, and confidentiality.
