Responsibilities:

  • Provide professional, friendly, and proactive guest service while supporting fellow colleagues.
  • Manage all kitchens in the absence of the Cluster Executive Chef.
  • Create food menus with guidance from the Cluster Executive Chef.
  • Prepare daily market lists for quality food ordering while adhering to budgeted costs.
  • Ensure quality and par levels are maintained by liaising with storekeepers.
  • Collaborate with the catering department for menu coordination and client meetings.
  • Conduct daily briefings with Sous Chefs.
  • Communicate standards and expectations to all kitchen colleagues.
  • Maintain open communication with Outlet Managers and Sous Chefs regarding guest feedback.
  • Balance operational, administrative, and colleague needs.
  • Ensure proper staffing and scheduling according to productivity guidelines.
  • Follow kitchen policies, procedures, and service standards.
  • Adhere to safety and sanitation policies when handling food and beverages.
  • Perform other duties as assigned.

Qualifications:

  • Previous leadership experience in the culinary field is required.
  • Journeyman’s papers or international equivalent required.
  • Diploma certification in a culinary discipline is an asset.
  • Proven track record of cost control (food, equipment, labor, and wastage).
  • Proficiency in Microsoft Windows applications.
  • Strong interpersonal and problem-solving skills.
