Position Overview
A Food Safety & Hygiene Manager oversees the maintenance and upgrade of sanitation and hygiene standards to ensure all food served to guests and employees is free of contamination.
Key Responsibilities
The Food Safety & Hygiene Manager will perform the following tasks to the highest standards:
- Propose and maintain minimum standards in all work areas to adhere to hygiene standards.
- Maintain effective records related to the hotel's sanitation and hygiene efforts.
- Formulate and maintain an up-to-date methodology manual for section personnel.
- Promote effective dissemination coordination with hotel staff.
- Ensure the office/section area is clean and orderly with an efficient workflow.
- Perform special assignments and projects assigned by superiors.
- Conduct and chair the FSS Monthly Meeting.
- Monitor and assist in maintaining an excellent sanitation and hygienic environment.
- Participate in the Hotel's Sanitation Team for monthly inspections.
- Liaise with external agencies on sanitary matters.
- Develop and maintain food safety management systems (e.g., HACCP, ISO 22000).
- Ensure compliance with food safety regulations.
- Conduct regular audits and inspections of food areas.
- Train staff on food safety standards and best practices.
- Ensure all employees are certified in relevant food safety programs.
- Manage policies and procedures effectively.
- Document and keep records for all compliance activities.
- Identify potential food safety risks and develop mitigation plans.
- Investigate food safety incidents and implement corrective actions.
- Collaborate with kitchen staff and suppliers to ensure standards.
- Liaise with health authorities during inspections.
- Prepare regular reports on food safety compliance.
- Present findings and recommendations to senior management.

- GMP (Good Manufacturing Practice) certification.
- HACCP (Hazard Analysis and Critical Control Point) certification.
- OHSAS 18001 certification.
- Train the Trainers facilitator certification.
- Environment Management System ISO 14001 certification.
- GROOMING/UNIFORMS: All employees must maintain a neat appearance.
- NOTICE: Standing, bending, and lifting weights up to 25 lbs. may be required.
- Food Safety or HACCP qualification is mandatory.
